Westcave Cellars Winery & Brewery is a family-owned and operated Estate that proudly offers wines crafted from 100% Texas-grown grapes, many produced from the 9-acre Hill Country vineyard previously owned, but still farmed, by the Fettys. Our handcrafted wines are produced in a French style, making them unique among other Texas Hill Country wineries. Our Craft Beer is mostly 100% Texas-grown with hops farmed in the Texas Hill Country.

Reservations are now required for tasting experiences for up to 6 guests. Please use the TOCK “BOOK NOW” button located below or found at the top right of each page. For more than 6 guests, please call 512-431-1403 for reservations.
NOTE: When you book your reservations through the Tock portal, the $10.00 reservation deposit is to reserve your seat inside our tasting room (limited seating capacity). This deposit will be applied toward your tasting fees only. The Tock portal only allows for reservations made 24 hrs in advance. For same-day appointments, please call the tasting room in advance to confirm seating availability at 512-431-1403.
Walk-ins are always welcome for tastings, bottles, and glass service. However, we cannot guarantee indoor seating without prior reservations.

Our wine flight features a premium selection of 6 wines including white, rosé, and red wines. They are produced with 100% Texas grapes grown on meticulously maintained vineyards from around the state.
High Cross Viognier – 2019
Bottle: $25.95 / Club: $20.76 / Glass: $10.00
This vintage of our beloved Viognier is extremely complex and powerful. On the nose are hints of jasmine, citrus and nuances of vanilla from the French oak aging. On the palate you’ll find notes of lemon peel, lemon candy and stone fruit. Structurally the mouthfeel is robust with layers of complexity, medium acidity and a smooth finish.
Blanc Du Franc – 2019

Our dry rose is made using the direct press method. This is a traditional French style of winemaking in which the whole batch of red grapes is pressed after a limited amount of skin contact after harvest. On the nose are hints of raspberry, strawberry, dried roses and a hint of lavender. The palate showcases beautiful nuances of strawberries, melon and citrus. Structurally the texture is gentle, elegant and very refreshing. Expect crisp, bright acidity with a long finish.
Chenin Blanc – 2019

This delightful Chenin is clean and bright. Nuances of citrus and floral notes tease the nose, while the palate is layered with lemon rind, grass and a hint if salinity. The acidity is powerful, with a lingering finish.
Sangiovese – 2018
Bottle: $34.95 / Club: $27.96 / Glass: $11.00
This is a classic example of Texas Hill Country grown Sangiovese. On the nose this wine teases with hints of cinnamon, earl grey tea, red cherries, leather and baking spices. On the palate are notes of black cherry, persimmon and dried figs. Structurally the wine is medium bodied, with moderate acidity and supple tannins. The finish is very smooth.
Merlot – 2017
Bottle: $28.95 / Club: $23.16 / Glass: $10.00
Our Merlot is a unique wine because our winemaker Allan Fetty uses some American oak barrels for aging. It offers aromas of dark cherries and spice. Flavors of succulent dark cherries and luscious plums fill the palate, while robust tannins coat the tongue. This Merlot has an extended finish with an earthy, cedar accent.
Estate Syrah – 2018 (Limited Quantity Release)

This is our first ever release of a 100% Estate grown Syrah! Plumb in color the nose hints at ripe raspberries, vanilla, cinnamon, white peppercorns, leather and a hint of smokiness. On the palate find notes of raspberries, caramel, baking spices and peppercorns. Structurally the 2018 Estate Syrah is medium bodied with dusty tannins, moderate acidity and an elegant finish.
Freethinker Ale – Blonde Ale
Deep gold in color with a bold malt flavor and moderate hops. Rich and full-bodied with a hint of citrus. A true Texas handcrafted ale made with Texas barley along with Texas hops and pure spring water from the brewmeister’s ranch near Sisterdale, TX.
Sunday House – Pale Ale
Another 100% Texas beer that is light in color and body, but full of rich citrus and hops. Brewed with Texas barley and hops and pure spring water from the brewmeister’s Hill Country ranch.
Penetaka Amber – Amber Ale
Named for the Penetaka Comanches who befriended the Free Thinkers, this amber ale is made with two-thirds Texas malted barley and one-third Texas raw honey, giving it a unique (but not sweet) flavor. Along with Texas grown hops and natural springs water, the Penetaka Amber is a truly native Texan beer.
Prince Carl Porter – Brown Pecan Porter
Our 2021 batch is a robust porter with notes of pecan, coffee, and chocolate, giving it a rich flavor and texture that is truly unique. A true Hill Country crafted beer using hops, natural spring water, and toasted pecans from the brewmeister’s ranch.

Savory Sausages. $11
We are serving up slices of brat, jalapeño and cheese sausage, and beef sausage with stone ground mustard. A great pairing for our 100% Texas Beer. *This is a GF selection.

Grape to Bottle: $35.00
Become a wine-spert! Make a reservation to enjoy a behind-the-scenes tour to learn how grapes become bottled wine. This adventure begins with an in-depth, guided tasting in the new, state-of-the-art winery. Samples of wines in various stages and ages from tanks and barrels intersperse the experience. (Approximately 1 hour, 30 minutes)
The winery is 55°F at all times. You may want to bring a sweater or jacket.
